Black Magic Devil Buns

Black Magic Devil Buns made from scratch - Ingredients:

  • 500g strong white bread flour
  • 10g salt
  • 25g sugar
  • 2 tbsp activated charcoal
  • 1 egg + 1 egg white for glazing
  • 300ml warm milk
  • 50g butter
  • 10g instant yeast
  • Black sesame seeds, optional but spooky

When baking on the BBQ, use a handful of Kiln Dried Kindling to ignite and then add a big chunk of Binchotan Lumpwood Charcoal to heat up your BBQ for an hour or so without wasting fuel, no odour, long lasting and a beautiful red hot glow that keeps the BBQ at a stable temperature.

A little goes a long way and the flavour is unreal, these burger buns took on a very subtle smoked infusion that adds to the flavour profile of the baked bread.

Method of Mayhem:

  1. Mix milk and yeast together
  2. Add Sugar and the egg
  3. Put the activated charcoal to one side and mix together all the dry ingredients and add to the mixer
  4. When it’s all come together add in the activated Charcole, then 10g of butter till it’s incorporated and then add in the other 10g and so on till you have used all the butter
  5. Let it rise for 1 hr and shape 8 buns
  6. Prove again for another hour
  7. Glaze with egg white, sprinkle with black sesame and bake 15–18 mins 190°C Oven or in a BBQ at 200c for 10 mins
  8. To finish the look add red chilli horns for that devilish vibe
