Ingredients:

  • 200g self-raising flour

  • 1 1/2 tsp baking powder

  • 3 large eggs

  • 200ml milk

  • 25g melted butter

  • 1 tbsp golden caster sugar

  • Vegetable oil for cooking

  • Toppings of your choice (Examples: Bacon & Maple Syrup or strawberries/Blueberries & Crème fraîche)

Method:

Fuel used: Real Lumpwood Charcoal (Can be used with any quality lumpwood charcoal as an alternative) & Woddies Firelighters.

  1. Light your Woodies Firelighters and add your charcoal in a pryamid shape above.
  2. Place the lid on top and leave to burn for up to 30 minutes or until the charcoal has ashed over. Be careful when handling the hot frying pan.
  3. Mix the Flour, Baking powder, Golden caster sugar and a pinch of salt in a large bowl.
  4. Create a well in the centre with the back of your spoon then add your eggs, melted butter and milk.

  5. Whisk together until smooth.
  6. Heat a small knob of butter and 1 tsp of oil on your frying pan over a medium heat. Use an ice cream scoop or jug to add your batter to the pan. Make sure you don’t put the pancakes too close together as they will spread during cooking. Cook the pancakes on one side for about 1-2 mins or until tiny bubbles form and pop on the surface. Flip the pancakes over and cook for a further minute. Repeat this until all the batter is used up.
  7. Place your pancakes stacked up on a plate with your choice of toppings.
