Indian Spiced Burgers with Curry Mayo, by Theo Michaels

My Indian spiced burgers make for a great alternative when you fancy something with a little kick and lots of Indian spice! The curry mayo is a great cheat to have and adds a nice backdrop to the beefburger. Check out the video at the bottom of the page to get a step by step guide.

TOTAL TIME 45 Mins
  • 8 St Louis style pork ribs (skin removed)

Burgers:

  • 250g beef mince
  • 1 garlic, grated
  • 1 pinch ginger, grated
  • 1 tbsp garam masala
  • ¼ tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground cinnamon
  • 1 tsp ground fenugreek
  • Handful of coriander, chopped
  • 1 red chilli, finely chopped
  • ¼ red onion, finely chopped

Curry Mayonnaise:

  • 1 cup mayonnaise
  • 1 tbsp curry powder
  • ½ lime, juiced

Garnish:

  • 2 brioche buns
  • 1 baby gem lettuce
  • 2 tomatoes, sliced
  1. Fire up the Au Natural compressed briquettes and let them burn till ashen and the flames have died down, then place the grill on top.
  2. Mix all the beefburger ingredients together and form two large patties.
  3. Lay the burgers onto the hot grill and cook for about 6-8 minutes on each side, then remove and rest for 5 minutes. While resting you can lightly toast the brioche buns for a minute on the grill.
  4. To make the curry mayo, simply add all the ingredients together, taste for flavour balance and spoon over the bottom bun.
  5. Add a heap of shredded lettuce, a few slices of tomato and lay the burger on top.
  6. Drizzle with some sriracha sauce or ketchup and eat!
