2 Medium white onions

200g Leeks

200g Celery

1 Red bell pepper

1 Green bell pepper

6 Garlic Cloves

1 tbsp Extra virgin olive oil

500g Tomatoes

2 Red chillies

1 tsp Salt

1 tsp Black pepper powder

100g Butter

100g Brown sugar

3 tbsp Worcestershire sauce

60ml Balsamic vinegar

2 tbsp Maple syrup

400ml Ketchup

500ml Beef stock

250ml Bourbon whiskey
- Have a large pan on medium heat. Finely chop the onions and cook in olive oil for 5 minutes till they turn soft, translucent and change colour.
- Add chopped leeks and celery, finely chopped bell peppers, and whole garlic cloves. Cook for 3 minutes while stirring regularly.
- Add all other ingredients except butter and Bourbon whiskey.Stir well, then let it cook for 45 minutes while stirring occasionally.
- Add Bourbon, stir well, then put everything in a blender untill the sauce is as smooth as you like.
- Strain back into the pan and cook with butter for a couple of minutes stirring well to mix the butter into the sauce.
