50 ml Rendered bacon fat

2 Minced garlic cloves

2 Finely chopped white onion - small

1 tbsp Oregano

1 tbsp Yellow mustard

1 tbsp Chipotle powder

2 tbsp Soy sauce

300ml Tomato ketchup

50ml Vinegar

2 tbsp Worcestershire sauce

2 tbsp Maple syrup
- Put the pan on medium heat. Add bacon fat and cook the onions till they’re softer and translucent. Add the garlic and cook for a minute.
- Add mustard, oregano and chipotle powder and cook for another additional minute.
- Stir well and let it simmer for 10 minutes before stirring again.Your sauce is now ready to go. You can strain it if you prefer a smooth texture.
- Add sauces, ketchup, vinegar and maple syrup. Stir well and then let it cook for 15 minutes, while stirring occasionally.
- Put your sauce in the blender if your prefer a smoother texture.
