Special Flavour Bourbon BBQ Sauce

 2 Medium white onions
 200 g Leeks
 200 g Celery
 1 Red bell pepper
 1 Green bell pepper
 6 Garlic
 1 tbsp Extra virgin olive oil
 500 g Tomatoes
 2 Red chillies
 1 tsp Salt
 1 tsp Black pepper powder
 100 g Butter
 100 g Brown sugar
 3 tbsp Worcestershire sauce
 60 ml Balsamic vinegar
 2 tbsp Maple syrup
 400 ml Ketchup
 500 ml Beef stock
 250 ml Bourbon whiskey

Have a large pan on medium heat. Finely chop the onions and cook in olive oil for 5 minutes till they turn soft, translucent and change colour.


Add chopped leeks and celery, finely chopped bell peppers, and whole garlic cloves. Cook for 3 minutes while stirring regularly.


Add all other ingredients except butter and Bourbon whiskey.Stir well, then let it cook for 45 minutes while stirring occasionally.


Add Bourbon, stir well, then put everything in a blender untill the sauce is as smooth as you like.


Strain back into the pan and cook with butter for a couple of minutes stirring well to mix the butter into the sauce.
