Carolina Gold BBQ Sauce

A tried and tested favourite for those looking for something a little different. The mustard based Carolina Gold brings a special tangy and sweet flavour that goes well with pork, but works for other meats too.
1 cup Yellow mustard
1 Minced garlic
1 Finely chopped white onion - small
100 g Brown sugar
180 ml Apple cider vinegar
1 tsp Salt
1 tsp Ground black pepper
50 ml Tomato ketchup
4 tbsp Olive oil
20 g Butter

In a heated pan, add your 4 tbsp of olive oil. Drop the finely chopped onion in there too and sautee until they get a little glaze and just start to turn colour.

Now add all other ingredients to the pan except, mustard and brown sugar. Cook untill the butter is fully melted while stirring often to blend all ingredients into a consistent mixture.

Add mustard and brown sugar. Stir well and let it simmer for 10 minutes before stirring again.Your sauce is now ready to go. You can strain it if you prefer a smooth texture.
